The Phoenix Dancong Oolong tea boasts a vast array of varieties. This is a representative example: Wudong Songzhong.
There were originally four mother trees of Songzhong, one of which—700 years old—has withered and died. The tea leaves produced by the remaining three trees are virtually impossible to find on the market. What we drink today comes from descendants of these mother trees, propagated through grafting and asexual reproduction. Wudong is the name of the location where Mother Tree No. 1 (which died in 2016) was originally found.
The second-generation Songzhong produced in this region today belongs to the Huangzhixiang style—a charcoal-roasted oolong tea.
Brewing Guide:
Teaware: A small Yixing clay teapot or a porcelain gaiwan is ideal to appreciate its aroma.
Rinse: Use near-boiling water (95-100°C / 203-212°F) to quickly rinse the leaves once and discard the water. This awakens the tightly rolled leaves.
Water & Timing: Use the same high-temperature water. The first infusion should be steeped for 3-5 seconds. Gradually increase steeping time by 5-10 seconds for each subsequent brew. This tea can be brewed 7-10 times.
